Rachael Ray’s Quick Skillet Lasagna

Ingredients

  • 1 pound ground beef or Italian sausage
  • 1 jar marinara sauce
  • 8–10 oven-ready lasagna noodles, broken into pieces
  • 1 cup ricotta
  • 1 cup shredded mozzarella
  • ½ cup grated Parmesan
  • Fresh basil or parsley (optional)

Brown the meat in a large skillet. Add marinara sauce and about half a cup of water. Stir in the broken noodles and cover until the noodles soften, about 12 minutes. Spoon ricotta on top, sprinkle with mozzarella and Parmesan, and let it melt. Add herbs if you like. Serve straight from the skillet.
